Di-ammonium phosphate – DAP – 100g
To summarize Di-ammonium phosphate (DAP), a fertilizer used in distilling as an acidifying agent. Helping reduce the pH of the mash during fermentation. To reduce contamination and maintain flavor. DAP also adds nitrogen that help with yeast growth and fermentation. Importantly, do not add to much DAP! It will result in a sour beer. In essence add DAP to mashes for yeast activity and faster fermentation’s.
How to use Di-ammonium phosphate in distilling.
In brief to use DAP in distilling, firstly mix 1 teaspoon of DAP with 1 liter of boiling water. Stir until dissolved. Secondly cool the mix, then pour it into the fermenter. The DAP will help increase the alcohol content by providing additional compounds for the process.
Lastly, once fermenting is complete, separate the liquid from the solids. Distill the liquid. It will have higher alcohol content than normal because of additional compounds from the DAP. Remember to use DAP in the right amounts to avoid unwanted off-flavors.
